Voidable years help to spread pro-rated bonuses. But they add dead cap the year the contract voids.
So it's basically like borrowing from future cap space.
Example 4 year contract with 2 void years.
Signing bonus:20m. Which means the signing bonus is spread over 4 years instead of two. The only difference is that in year 3 you add 10m dead cap for a player who is no longer on your team (or you're still paying for that old contract)
the point of the void years is to push the signing bonus beyond the years of the actual contract... but bonuses only pro-rate over 5 years so until the chiefs restructured Mahomes's deal his bonus only stretched 5 years into his 10 year deal (now with the restructure there is some bonus money a year further on in the future)
so that stops the ability for teams to stretch those deals into the future - they only really work with short term deals that you want to spread the bonus for - otherwise teams would put infinite void years onto every contract and sign everyone to a fully guaranteed signing bonus only contract and never run out of cap space ever
but obviously that moves instant dead cap into the future that you can do nothing with
for what it's worth im pretty sure the saints are only doing weird crazy deals because it's about the only way they can fit under the cap this year...

The only reason I asked if it was new because the way these are being restructured for cap room and what not, I'm just sitting here thinking why didn't we do that with Flacco's contract and announce it as a 7-8 year deal that's voidable after 3 years. Looking at the cap hit of his contract he signed, we had to restructure after three years anyway so instead the deal has 4-5 years being voidable years. Then we could have kept Anquan around instead of trading him.
